Bánh Mì Rice Bowl
The refreshing deliciousness of a Bánh mì sandwich on top of a bowl of rice.
INGREDIENTS
3 Cups Uncooked Jasmine Rice
Pork
3-4 lbs Bone-in Pork Roast
1 Tbs. Five-Spice Powder
1 Tbs. Kosher Salt
2 Tbs. Chili Powder
1/2 Tbs. Black Pepper
2 Tbs. Dried Oregano
1 Tbs. Garlic Powder
32 Oz. Pho Broth
Olive Oil
Toppings
1 10 oz. Package Shredded Carrot
1 Small Head Purple Cabbage
1 Bunch Cilantro
1 Jalapeños
1 English Cucumber, sliced into small matchsticks
5 Radishes, sliced into small matchsticks
4 Tbs. Rice Wine Vinegar
1 Tbs. Sugar
2 Tsp. Kosher Salt, divided
Sauce
1/2 Cup Mayo
6 Tbs. Hoisin Sauce
1 Tbs. Rice Wine Vinegar
DIRECTIONS
Pre-heat oven to 300°
Season roast with five spice powder, salt, chili powder, black pepper, oregano, and garlic powder. Add a few tablespoons of olive oil to a large dutch oven over medium-high heat. When hot, add the roast and brown well on all sides, 2-3 minutes per side. Remove from heat and add pho broth until it comes at least half way up the roast, if more liquid is needed, add water.
Cover dutch oven and place in oven and cook for 3-4 hours (approx. 1 hour per pound).
While roast is cooking, prepare the other ingredients.
Make a simple slaw by combining carrots, radish, and cucumber in a medium sized bowl. Using a microwave safe bowl, combine vinegar, sugar, and salt. Microwave for 30 seconds. Pour liquid over vegetables and toss. Set aside until ready to serve.
Thinly slice cabbage and lightly season with salt. Toss and set aside until ready to serve.
Thinly slice jalapeno. Chop cilantro.
Prepare the sauce by whisking together mayo, hoisin sauce, and vinegar.
Cook rice according to package directions.
When roast is done, remove from oven, shred (it should just fall apart and the bone should slide out clean), and return to the liquid.
To build the bowls, spoon several heaping spoonfuls of rice into a bowl, top with shredded pork, vegetable slaw, cabbage, cilantro, jalapeños, and sauce.

NOTES: This will serve 4-6 people. Also, the sauce ends up being the star of this dish so you may want to make extra 😊
You can easily substitute other meats, i had some friends over that don’t eat pork and we pan seared some chicken that was marinated in lemon juice and cajun spice. You can also just leave the meat out entirely if you want to go veggie and this is still amazing.
